    <abstract language="eng"><p class="normal-font">Lead: The article proves the importance of theoretical and methodological approaches to the modernisation of the dairy unit. The authors point out the reasons for ineffective modernisation and describe the methods for designing an innovative plan and programme of modernisation. The article explains the interconnection of the dairy industry state ad implementation of the state’s food security concept.</p></abstract>
